If I hear about how amazing eggplant parmesan is one more time, I may just lose my mind! I know I may be alone in this, but the smell of that dish is almost unbearable, not to mention, why would anyone want to completely obliterate the taste of such a lovely and delicate nightshade with cheese and breadcrumbs? Eggplant is so amazing on its own, I choose to celebrate it when it is available in season, because food! Quality is at its highest right now, and I will eat it allllll the ways.
