Sesame Ginger Chicken Foot Bahn Mi

Bahn Mi is a traditional Vietnamese sandwich that I basically lived off of in the afternoons during my travels in Vietnam. They are made about 1000 different ways, and generally consist of fresh pickled veggies and meat on a perfect French baguette (colonialism, eh?). I played around since winter CSAs are chalk full of beautiful potatoes, and wanted to incorporate them too into this version of bahn mi. Potato cassava bread recipe in the works. Stay tuned!-Chicken foot cooked down, de-boned and tossed in ginger infused soy and sesame.-Chopped daikon radish, cucumber, carrot, scallion, garlic, and jalapeno tossed with –Palm sugar, fish sauce, and lime (nam pla)-Sriracha mayonnaise made with avocado oil, lime, egg and sriracha-Gluten free potato bread (that I almost have the recipe perfected for)
