Apple Muffin

Adapted from Deborah Madison, Vegetarian Cooking for Everyone

Ingredients

2 1/2 c flour
1 teaspoon baking soda
2 teaspoon baking powder
1/3 cup brown sugar
1/2 teaspoon salt

2 eggs, lightly beaten
1 1/3 c buttermilk (I substituted 1 cup milk and 1/3 cup yogurt)
1 1/2 t vanilla
1/3 cup melted butter or lard

Instructions

  1. Preheat oven to 375F and grease muffin tins.
  2. Mix flour, baking soda, baking powder, brown sugar, and salt in large bowl.
  3. Beat eggs in a small bowl. Mix in buttermilk, vanilla, and melted butter.
  4. Add wet ingredients to dry ingredients and combine using large strokes. Mix just until combined. Don’t overdue it!
  5. Spoon muffin batter into tins and bake for 20 minutes or until brown and cooked through.
