Apple Muffin
Adapted from Deborah Madison, Vegetarian Cooking for Everyone
Ingredients
2 1/2 c flour
1 teaspoon baking soda
2 teaspoon baking powder
1/3 cup brown sugar
1/2 teaspoon salt
2 eggs, lightly beaten
1 1/3 c buttermilk (I substituted 1 cup milk and 1/3 cup yogurt)
1 1/2 t vanilla
1/3 cup melted butter or lard
Instructions
- Preheat oven to 375F and grease muffin tins.
- Mix flour, baking soda, baking powder, brown sugar, and salt in large bowl.
- Beat eggs in a small bowl. Mix in buttermilk, vanilla, and melted butter.
- Add wet ingredients to dry ingredients and combine using large strokes. Mix just until combined. Don’t overdue it!
- Spoon muffin batter into tins and bake for 20 minutes or until brown and cooked through.
