Broccoli & Kohlrabi Crunch Salad

Here is a fresh spin on the classic broccoli salad. Don’t have any kohlrabi, salad turnips or a diced up apple will work instead.

Ingredients

1 cup whole milk Greek yogurt
2 Tablespoons apple cider vinegar
1 Tablespoon pure maple syrup
1/2 teaspoon unrefined salt
1/2 teaspoon garlic powder
5 cups chopped broccoli

1 cup finely chopped/diced kohlrabi (peeled first)
1/2 of a small red onion, diced
1/2 cup sunflower seeds
1/2 cup raisins
4 slices of cooked and chopped bacon

Instructions
  1. In a large bowl combine the yogurt, vinegar, maple syrup, salt and garlic powder.
  2. Whisk until smooth.
  3. Add the remainder of the ingredients and stir to combine everything.
  4. Place in the fridge for at least 2 hours if not overnight to let the flavors meld into the broccoli.
