Cozy potato, bacon, cabbage soup
Ingredients:
Potatoes (about 4 medium)
Cabbage (half a head)
Bacon (4–6 slices)
Onion & garlic
Salt & pepper to taste
Broth or water
Directions

Prep everything

Peel and chop the potatoes into cubes.

Slice the cabbage.

Chop bacon into bite-size pieces.

Dice an onion and mince garlic.

Cook the bacon

In a large pot, cook the bacon over medium heat until crisp.

Remove bacon and set aside, leaving the rendered fat in the pot.

Sauté aromatics

Add onion and garlic to the bacon fat and cook until soft.

Add veggies
-
Add the potatoes and cabbage to the pot and stir to coat with fat.

Add liquid
-
Pour in enough broth or water to just cover the vegetables.

Season with salt and pepper.

Simmer

Bring to a boil, reduce heat, and simmer until potatoes and cabbage are tender (about 15–20 min).

Finish

Stir the bacon back in.

Taste and adjust salt and pepper.

Serve
-
Ladle into bowls.
