Cozy potato, bacon, cabbage soup

Ingredients:

Potatoes (about 4 medium)

Cabbage (half a head)

Bacon (4–6 slices)

Onion & garlic

Salt & pepper to taste

Broth or water

Directions

  1. Prep everything

    • Peel and chop the potatoes into cubes.

    • Slice the cabbage.

    • Chop bacon into bite-size pieces.

    •  Dice an onion and mince garlic.

  2. Cook the bacon

    • In a large pot, cook the bacon over medium heat until crisp.

    • Remove bacon and set aside, leaving the rendered fat in the pot.

  3. Sauté aromatics

    • Add onion and garlic to the bacon fat and cook until soft.

  4. Add veggies

    • Add the potatoes and cabbage to the pot and stir to coat with fat.

  5. Add liquid

    • Pour in enough broth or water to just cover the vegetables.

    • Season with salt and pepper.

  6. Simmer

    • Bring to a boil, reduce heat, and simmer until potatoes and cabbage are tender (about 15–20 min).

  7. Finish

    • Stir the bacon back in.

    • Taste and adjust salt and pepper.

  8. Serve

    • Ladle into bowls.

    • Delicious with buttered bread on the side!
