Cube Steak and Curried Vegetables

Wondering what to do with your cube steak? How about a quick veggie stir-fry-esque meal?

Ingredients

Cubed Steak (from your Meat CSA last week)
1 tablespoon olive oil or lard
1/4 cup Corn starch
Salt & Pepper

2-3 cups or more sliced/chopped Vegetables (whatever you have at hand: napa cabbage, zucchini, carrots, peas, green onions, salad turnip, kohlrabi, etc.)
1/4 cup soy sauce
1/4 cup honey

Instructions

  1. Slice cube steaks in to strips against the grain. Place 1/4 cup corn starch in bowl and season with salt and pepper. Coat steak slices in corn starch & let it absorb for a few minutes.
  2. Prep your vegetables.
  3. Make the sauce: combine soy sauce and honey
  4. Heat 1 T. oil in non-stick skillet.  Working in batches, brown and crisp up steak slices. Place cooked steak in a bowl and keep warm.
  5. Once steak is all cooked, add another 1 T. oil to skillet and saute vegetables. Add the sauce to the vegetables & stir. Add the cooked steak back to the skillet, stir, and let simmer in vegetables & sauce.
  6. Serve immediately with your favorite sides & watch it disappear! (Consider rice or cooked wheatberries or wrapped in Napa Cabbage leaves.)
