Greens w/Sausage & Apples

I made this last night for dinner and, let me tell you, for ease, speed, and flavor, make this one of your new go-tos for a quick weeknight meal. I ate it just as, but over rice or potatoes it would be delicious too.

Ingredients

1 pack ground pork (any flavor)
1 onion, sliced thin
1-2 bunches hearty greens, removed from stems and sliced and diced

1 cup white wine
2 apples, cored and diced
salt and pepper to taste

Instructions

  1. In a large frying pan with a lid, sauté the sausage until it is almost browned. Add the onions and cook until the onions are soft and golden. Drain extra grease if you really want.
  2. Add the chopped kale to the top of the sausage, top with the chopped apple, sprinkle with salt and pepper, pour in the wine and cover. Let steam for a couple minutes and then remove lid, stir, and put the lid back on for a few minutes more.
  3. When the kale is tender and wilted, remove lid and cook away the liquid. Adjust seasoning to taste.
  4. Serve as is or with rice or potatoes or pasta.
