4 Herb & Carrot Top Pesto
created by our Apprentice, Angela. We served this at our CSA early bird renewal dinner the other evening and it was amazing!
Ingredients
1 bunch of carrot tops
1/2 cup parsley
1/2 cup chives
1/2 cup lovage
1/2 cup basil
1/2 cup olive oil
4 cloves garlic
2 tbsp apple cider vinegar
1 cup of chopped pecans
1 tbsp salt
1 tsp paprika
1/2 tsp black pepper
2 tbsp of honey
Instructions
- Layer in your food processor your ingredients in the following order: nuts, garlic, herbs, liquids, spices. Pulse and blend until the consistency you prefer. Adjust seasonings to taste!
