Jammy Egg Salad

Ingredients

  • 4 Soft-boiled eggs
  • 1 Small shallot
  • 1 Bunch lovage
  • 1 Small bunch of chives
  • Mayonaise
  • Your pickle of choice
  • Hot Sauce (optional)

Instructions

  1. Soft-boil your eggs (I think about 6 minutes but you can go for longer if you want them less jammy)
  2. Once boiled, put the eggs in an ice water bath.
  3. Peel the eggs and place them in the container you will store them in.
  4. Add in finely chopped shallot, lovage, chives, and pickles of your choice.
  5. Add in about a tablespoon of mayo
  6. Add hot sauce to your liking
  7. Mix well

Serve over toasted English muffins, bread, or use as a protein on a leafy green salad!
