Jammy Egg Salad

Ingredients
- 4 Soft-boiled eggs
- 1 Small shallot
- 1 Bunch lovage
- 1 Small bunch of chives
- Mayonaise
- Your pickle of choice
- Hot Sauce (optional)
Instructions
- Soft-boil your eggs (I think about 6 minutes but you can go for longer if you want them less jammy)
- Once boiled, put the eggs in an ice water bath.
- Peel the eggs and place them in the container you will store them in.
- Add in finely chopped shallot, lovage, chives, and pickles of your choice.
- Add in about a tablespoon of mayo
- Add hot sauce to your liking
- Mix well
Serve over toasted English muffins, bread, or use as a protein on a leafy green salad!
