Lovage and Lemon Roasted Chicken

Ingredients

1 handful lovage leaves and stems
1 lemon sliced
4 chicken legs whole, bone in
1 onion chopped

several carrots and/or potatoes, chopped
sea salt to taste
pepper to taste

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Part out your chicken. (See YouTube video below!)
  3. Lay a bed of lovage in the bottom of a large baking pan.
  4. Tuck a lemon slice and lovage leaves under the skin of the chicken parts.
  5. Place the chicken parts in a pan and sprinkle with salt and pepper and drizzle with olive oil.
  6. Throw some chopped onion and carrots/potatoes in around the chicken.
  7. Bake, covered, for 30 minutes, and then uncovered for another 30 minutes, or until the skin of the chicken is crisp and the meat and vegetables are done.
