Its Winter Squash season!  We will be sprinkling some exciting varieties into the CSA over the next couple weeks.  This week we’ve got Spaghetti Squash!!!!!!  This is a fun alternative to pasta.  Cut in half, roast, then spoon out the “noodle like” flesh and top with a sauce sauce.

We actually got some beets, despite the curly top virus we’ve been dealing with on the farm. The Chioggia beets are notably resistant compared to the red and gold varieties.  Noted.  Unfortunately the Chioggias don’t store as well as red especially, so there’s that…. Since the harvest was meager, we’ll be moving baby beets that really don’t store well, but are great cut in half and roasted.  So be looking for these little gems the next couple weeks.
