Ingredients

1 bok choy, quartered long ways

4 cloves of garlic, peeled and minced

2 inches of ginger, peeled and minced

Soy sauce, 1/8 cup

Honey, 1 tbsp

Flaky salt, to finish
Instructions

Heat your pan over medium high heat, add your choice of cooking fat (I keep bacon grease in my fridge for moments like these) and wait to put the bok choy in until the pan is hot.

Once the pan is heated, put the boy choy down and allow to cook undisturbed until it develops a good sear. If your pan is hot, this will take 2 or so minutes.

Remove the bok choy and set aside.

Add ginger and garlic and cook until fragrent. Then add the soy sauce and the honey and cook until the soy sauce thickens up a bit.

Now return the boy choy to the pan and use a spoon to cover it in the ginger, garlic sauce.
*This side dish should be cooked at the last possible moment. It takes less than ten minutes total and the bok chou is best served hot and fresh.
