Sticky Smashed Pork Tacos
Ingredients
Seasoned Pork

1 1/2 lb ground pork

1 tbsp grated fresh ginger

1 tbsp minced garlic

1 tbsp soy sauce

1 tbsp honey

1 tsp each: cayenne, garlic powder, flour
Smashed Tacos

8 corn tortillas (street-style)

2 tbsp olive oil
-
Pickled onions
-
Chopped scallions
Sticky Glaze
-
3 tbsp soy sauce
-
3 tbsp honey
-
1 tbsp sesame oil
-
1 tbsp sesame seeds
-
1 tbsp hoisin sauce
-
Juice of 1/2 lime
-
1 tsp sriracha
-
1 tsp grated fresh ginger
Directions
Mix the ground pork with the ginger, garlic, soy sauce, honey, and spices in a bowl until everything is well combined. In a small saucepan, stir together all the glaze ingredients, bring it to a boil, then let it simmer for 3–4 minutes until slightly thickened. Divide the pork mixture into eight balls and place one on each tortilla, pressing it flat so it covers the surface. Heat the olive oil in a large skillet and cook each tortilla pork-side down for about 2 minutes, then flip and cook for 1 minute until the tortilla starts to crisp at the edges. Brush the pork with the glaze, flip again, and cook another 30 seconds; if the tortilla needs more crisping, give it another minute. Repeat with the remaining tortillas. Brush on any extra glaze, then top the tacos with pickled onions and scallions. Serve warm.
