Veggie IDs: Celeriac/Celery Root
Celeriac: aka celery root, is the bulb end of the celery plant. While it is considered a root vegetable, it actually is a bulb with lots of baby roots attached to it.
I like to think of celeriac as a celery potato and I use it as both a celery and a potato. I chop it up and add it to roasts, soups, and purées (like a potato) or I dice it and add it to carrots, onions, and garlic as “celery” in a soup base.
You can also enjoy celery raw in a remoulade. Which is a fancy french coleslaw-esque recipe featuring celeriac and mayo.
