Bahn Mi
A baguette or sandwich roll
Protein of choice (grilled chicken, leftover pork, or a jammy fried egg)
Seasonal veggies (think carrots, radishes, cabbage, turnips—raw or lightly roasted)
Fresh herbs (cilantro is classic, but parsley or green onion work too)
Mayo or a creamy spread
Something spicy (sriracha, chili crisp, or pickled jalapeños)
Thinly slice your veggies and toss with a splash of vinegar, a pinch of salt, and a little sugar. Let sit for 10 minutes while everything else comes together.
Toast your bread lightly. Spread mayo on both sides. Add your protein, then pile on the veggies and herbs. Finish with heat. Close it up, press gently, and eat while it’s messy.
