The Season is Wrapping Up
“The finish line is insight” is the text I got from Joe this weekend.
The commercial season is a bit of an odd finish. They could close it at any given time, which is why he’s out there fishing every day. He’s freezing everything super fresh, and his wife has been making the drive out to us every other week.
All that to say, our freezers are full, and we’re hoping we’ll be able to keep Chinook and Steelhead available all winter long.
You’ll be able to buy it each weekend at our Farm Store once the market season comes to a close. In the meantime, you can order below to have fish delivered to the Bend Farmers Market, the NWX Farmers Market, or Locavore.
This week’s catch:
- Chinook Salmon
- Steelhead
- Salmon Collars
- Salmon Spines & Head Packages
Chinook Salmon
Known as the king of Pacific salmon, Chinook is prized for its rich flavor, buttery texture, and high omega-3 content.
Steelhead
Often mistaken for salmon, steelhead are ocean-going rainbow trout. They are highly prized for their light pink flesh, tender flake, and rich, slightly sweet flavor.
Salmon Collars
Salmon collars are the most decadent piece of fish you’ll have the opportunity to enjoy. Tender, rich in flavor and quick to grill these are so incredible.
Spines and Heads Ideal for making deeply flavorful broths and stocks, salmon spines and heads are rich in collagen, healthy fats, and remaining meat. Simmer slowly with aromatics for a nourishing base for soups, chowders, ramen, or seafood stews. |
