Immunity Green Goddess Soup

A good glug of olive oil or butter

1–2 alliums (onion, leek, shallot, garlic — whatever’s around)

3–4 cups chopped seasonal vegetables

1 starchy veg for body (potato, parsnip, winter squash, etc.)

A few handfuls of leafy greens

Salt, pepper, and one warm spice

Water or broth
-
A splash of cream, coconut milk, or yogurt (optional)
Sauté alliums in olive oil until soft.
Add chopped veg, potato, salt, pepper, and just enough water to cover.
Simmer until tender.
Add greens last, blend until silky.
Finish with lemon juice and cream or yogurt if you want richness.
