1 quart of beef broth
1 large onion
5 garlic cloves
3 bay leaves
Salt and pepper
6 corn tortillas or tortilla chips
3 dried pasilla chillies
15 oz of tomatoes
1 tsp cumin
1 tsp oregano

Instructions
Sear your short ribs in oil over high heat
Add chopped onion, bay leaves and salt to your pot with the short ribs
Cover with water and simmer until meat is tender 2-3 hours
Remove ribs, shred meat, and return to broth
Slice tortillas into long strips
Heat oil in a pan and fry tortilla strips until crispy
Quickly fry the dried chillies in the hot oil, about 10-15 seconds
Drain oil, then saute sliced onion and garlic until fragrant
In a blender, combine the sauteed onions and garlic, toasted chiles, and tomatoes.
