Spring Pea Salad

Ingredients

  • 2 cups snap peas

  • ¼ cup thinly sliced radishes

  • ¼ cup crumbled feta or goat cheese

  • 2 tbsp chopped fresh mint

  • 2 tbsp chopped fresh parsley

  • Zest and juice of ½ lemon

  • 2 tbsp olive oil

  • Salt and pepper

Instructions

  1. Blanch the peas (if fresh or frozen).
    Drop them in boiling water for about 1 minute, then rinse under cold water to keep them brigh

  2. t and crisp.

  3. Build the salad.
    In a bowl, combine peas, radishes, cheese, mint, and parsley.

  4. Dress it.
    Add lemon zest, lemon juice, olive oil, salt, and pepper. Toss gently.

  5. Serve.
    Taste and adjust seasoning. Great alongside grilled meat, roasted chicken, or on toast.
