Yogurt and Fresh Herb Sauce

It consists of 3 things:
1. Fresh herbs, literally any will do. Try mint, cilantro, and small amounts of fresh rosemary, oregano and lemon balm.
2. Scallions (aka green onions) that are dropped into a hot pan with olive oil and tossed around until bright green.
3. Yogurt, the tangier the better. If your yogurt is less tart, add lemon or lime juice.
Blend everything together. Taste test. Add salt and pepper as needed. If you need a thickener add nuts!
Serve with crackers or sliced veggies, over meatballs, or as a dip for chicken!
