Braised Pork Arm Roast
Ingredients

3–4 lb pork arm roast

2 tbsp olive oil
-
4–5 cloves garlic, smashed

1 tbsp salt
-
1 tsp black pepper
-
1 tbsp paprika
-
1 tbsp dried thyme or oregano
-
1 onion, sliced

1 cup chicken stock
Instructions

Preheat oven to 325°F.

Season the pork
Pat the roast dry. Rub with olive oil, salt, pepper, paprika, and thyme. -
Build the base
Place sliced onion and garlic in the bottom of a Dutch oven or roasting pan. Set the pork roast on top and pour in the stock. -
Roast low and slow
Cover and cook for 3–3½ hours, until the pork is very tender and easy to pull apart. -
Optional crisp
Remove the lid for the last 20 minutes to brown the top. -
Rest and serve
Let rest 10–15 minutes, then slice or shred.
