Braised Pork Arm Roast

Ingredients

  • 3–4 lb pork arm roast

  • 2 tbsp olive oil

  • 4–5 cloves garlic, smashed

  • 1 tbsp salt

  • 1 tsp black pepper

  • 1 tbsp paprika

  • 1 tbsp dried thyme or oregano

  • 1 onion, sliced

  • 1 cup chicken stock

Instructions

  1. Preheat oven to 325°F.

  2. Season the pork
    Pat the roast dry. Rub with olive oil, salt, pepper, paprika, and thyme.

  3. Build the base
    Place sliced onion and garlic in the bottom of a Dutch oven or roasting pan. Set the pork roast on top and pour in the stock.

  4. Roast low and slow
    Cover and cook for 3–3½ hours, until the pork is very tender and easy to pull apart.

  5. Optional crisp
    Remove the lid for the last 20 minutes to brown the top.

  6. Rest and serve
    Let rest 10–15 minutes, then slice or shred.
