Garlicky Sautéed Spring Greens & Herbs

Ingredients

  • 1 large bunch spring greens (kale, chard, spinach, or a mix), chopped

  • 2 tbsp olive oil or butter

  • 3 cloves garlic, sliced thin

  • 1 tbsp lemon juice or apple cider vinegar

  • 1 small handful fresh herbs (parsley, dill, or chives), chopped

  • Salt & pepper

  • Optional: grated parmesan or a fried egg

Instructions

  1. Heat olive oil in a large pan over medium heat.

  2. Add garlic and cook until fragrant, about 30 seconds.

  3. Toss in the greens with a pinch of salt. Cook, stirring, until wilted and tender (3–5 minutes depending on the greens).

  4. Finish with lemon juice, herbs, and black pepper.

  5. Top with parmesan or a fried egg if you want to make it a full meal.
