Oxtail Stew

Ingredients

1 oxtail, salted and peppered on all sides
lard or olive oil to brown the meat
1 onion, diced
4 cloves garlic, minced
4 cups chicken broth
1 cup red wine

3 bay leaf
salt & pepper
1 autumn frost squash, peeled and diced
1 1/2 cups cooked beans
4 roasted red peppers, chopped

Instructions

  1. Brown meat and remove from the Dutch Oven.
  2. Add the onions and garlic and sauté until starting to soften.
  3. Add the meat back in with the broth, wine, bay leaves, salt and pepper and cook for 2-3 hours.
  4. Add chopped winter squash and cook for 30 minutes.
  5. Add beans and chopped red peppers and cook for 30 minutes. Taste for salt and pepper.
