Oxtail Stew
Ingredients
1 oxtail, salted and peppered on all sides
lard or olive oil to brown the meat
1 onion, diced
4 cloves garlic, minced
4 cups chicken broth
1 cup red wine
3 bay leaf
salt & pepper
1 autumn frost squash, peeled and diced
1 1/2 cups cooked beans
4 roasted red peppers, chopped
Instructions
- Brown meat and remove from the Dutch Oven.
- Add the onions and garlic and sauté until starting to soften.
- Add the meat back in with the broth, wine, bay leaves, salt and pepper and cook for 2-3 hours.
- Add chopped winter squash and cook for 30 minutes.
- Add beans and chopped red peppers and cook for 30 minutes. Taste for salt and pepper.
