Pickled Red Onion Cups
A sweet friend of mine introduced me to these fun pickled red onion cups that she served a delicious tuna salad on! Genius! So here’s the recipe.
Make a quick brine: 
Water
Salt and PepperSugar
Pickling spice
Heat it up to dissolve in the sugar
Cut your onion into little cup shapes. Like quarters, then peel apart each layer.
Put your cups in a jar and pour the brine on top. Allow at least 30 min to pickle!
Scoop in your tuna salad! Yum!
