Roasted Broccoli & Cauliflower with Lemon Yogurt

  • 1 head broccoli, chopped

  • 1 head cauliflower, chopped

  • 3 tbsp olive oil

  • Salt & pepper

  • 1 cup plain yogurt

  • 1 tbsp lemon juice

  • 1 small clove garlic, grated

  • Fresh herbs (optional)

Instructions

  1. Heat oven to 425°F.

  2. Toss broccoli and cauliflower with olive oil, salt, and pepper.

  3. Roast for 20–25 minutes until browned and tender.

  4. Mix yogurt, lemon juice, garlic, and a pinch of salt.

  5. Spread yogurt on a plate and pile roasted veggies on top. Finish with herbs if you have them.
