Roasted Broccoli & Cauliflower with Lemon Yogurt

1 head broccoli, chopped

1 head cauliflower, chopped

3 tbsp olive oil

Salt & pepper

1 cup plain yogurt
-
1 tbsp lemon juice
-
1 small clove garlic, grated

Fresh herbs (optional)
Instructions

Heat oven to 425°F.

Toss broccoli and cauliflower with olive oil, salt, and pepper.

Roast for 20–25 minutes until browned and tender.

Mix yogurt, lemon juice, garlic, and a pinch of salt.
-
Spread yogurt on a plate and pile roasted veggies on top. Finish with herbs if you have them.
