Spring Pea & Herb Pasta

Ingredients

  • 1 lb pasta

  • 2 cups fresh peas

  • 3 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 lemon (zest + juice)

  • 1 handful fresh herbs (parsley, basil, or chives)

  • ½ cup grated parmesan or pecorino

  • Salt & pepper

Instructions

  1. Cook pasta in salted water until al dente. Add peas to the pasta water for the last 2 minutes of cooking.

  2. Reserve ½ cup pasta water, then drain.

  3. In a large pan, warm olive oil and garlic until fragrant.

  4. Add pasta, peas, lemon zest, and a splash of pasta water. Toss until glossy.

  5. Stir in herbs, lemon juice, and cheese. Season with salt and pepper.
