Spring Pea & Herb Pasta
Ingredients

1 lb pasta

2 cups fresh peas
-
3 tbsp olive oil

2 cloves garlic, minced

1 lemon (zest + juice)
-
1 handful fresh herbs (parsley, basil, or chives)

½ cup grated parmesan or pecorino

Salt & pepper
Instructions

Cook pasta in salted water until al dente. Add peas to the pasta water for the last 2 minutes of cooking.

Reserve ½ cup pasta water, then drain.

In a large pan, warm olive oil and garlic until fragrant.

Add pasta, peas, lemon zest, and a splash of pasta water. Toss until glossy.

Stir in herbs, lemon juice, and cheese. Season with salt and pepper.
