St Patty’s Day is coming up!

Only a few weeks away now and it is time to start thinking about what you want to cook for dinner to celebrate. That is, of course, if you want to do anything special.

While I have no idea what people in Ireland do on 3/17, I know that one of the classics over here on the other side of the pond is to do corned beef and cabbage. This meal is really a testament to the time of the year: carrots, cabbage, potatoes!

It takes 5-10 days to brine corned beef, so it is time to start thinking about getting that brisket and starting the brine. Below is a recipe for the whole schebang: the brine and the cooking after.

If you haven’t yet, make sure to grab a cabbage this week. We are almost out. They will store just as well at your house with the added benefit that you will know it is there when you need it.
