Crispy, Cheesy, Tender Broccoli and Cauliflower
In a world of cauliflower rice, and enough steamed broccoli to scare any kid straight, this easy breezy weeknight side/ vegetarian main course is a fun alternative to the boring veg of yesteryear.
You will need:
  • 1 head cauliflower

  • 1 head broccoli or 1.5 lbs of broccolini

  • 1/4 cup (half stick) butter, sliced thinly

  • 1.5 tsp. chipotle powder

  • 1/4 cup parmigiano reggiano cheese, grated

  • 1/4 cup fine shredded coconut, unsweetened

  • 3 fresh green onions

  • Salt and pepper to taste

Heat oven to 375F. cut 1/2 in thick slices of cauliflower and broccoli and alternate layering in a larger casserole dish.  Place slices of butter evenly across the veggies. Salt and pepper to taste. Add chipotle spice. Cover loosely with foil and bake for 40 minutes. Remove the foil and add first the cheese, and then the coconut. Bake another 20 minutes and broil the last bit until golden brown. Chop green onion and spread to garnish.
