Carrot and Golden (Beet) Milk Smoothies

How are you all holding up with the shelter-in-place order? I’m going a little stir crazy and haven’t left the house in 15 days… and counting. I have spent the last couple weeks baking up a storm and there are some byproduct recipes like this one that came about. I came up with this when I was making carrot beet cupcakes and had all this juice left over that I wasn’t to keen on drinking alone that that moment. I was thinking of the time I spent living in India where this 102 year old yogini taught me to make the most glorious chai and golden milk from scratch for all the Hindu gurus that came through our ashram. I was totally in love with the earthy, sweet, creamy, spicy nectars. I adapted the golden milk to a smoothie, and it is sooooo delicious. I hope we all get to go outside and travel again soon. But until then, eat well from our local farm’s bounty! hope you enjoy 🙂
  • 4 large carrots, juiced
  • 2 golden beets, juiced
  • small handful of almonds
  • 1/2 avocado
  • 1/2 tsp ground black pepper
  • 1/2 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp turmeric
  • 3 tbsp raw honey
Blend all together with a cup or two of ice to make this antioxidant powerhouse smoothie.
